  • – 1 frozen banana
  • – 1 cup almond milk
  • – 1 container or vanilla or honey yogurt
  • -4 handfuls of spinach
  • -1 spoonful of peanut butter
  • Directions.
  • 1. Add all ingredients into a blender. Then enjoy. This makes 2 servings in my opinion.

 Gluten Free Popoverpopover

  • 4 large eggs
  • 2 tbs. melted butter
  • 1 1/4 cup lukewarm milk
  • 1 cup gluten free all purpose flour
  • 1/4 tsp. xanthan gum
  • 1/2 tsp. salt
  • 1. Whisk egg, butter, and milk.
  • 2. In a separate bowl whisk flour, xanthan gum, and salt.
  • 3. Gradually add dry ingredients to liquid ingredients, until smooth.
  • 4. Pour mixture into muffin tins.
  • 5. Bake for 25 minutes at 400 degrees.

Cilantro Black Bean Quinoa Saladphoto (2)

  • 1 cup quinoa
  • 1 can black beans
  • 1 purple onion, diced
  • 1 carton of cherry tomatoes, quartered
  • 1 bunch of cilantro, chopped
  • 1 avocado, diced
  • 1 lime, juiced
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 chicken breast, diced
  • salt and pepper to taste.
  • DIRECTIONS:
  • 1. cook quinoa according to directions.
  • 2. dice all vegetables and mix with the cooked and cooled quinoa.
  • 3. add chicken breast and all seasonings, including the lime juice.
  • 4. Toss and serve!!!

Gluten Free Chocolate Chip Cookies

  • 2 sticks butter
  • 2.25 cups brown rice flourdownsized_0208131453
  • 2 cups all purpose gluten free flour
  • 1/4 cup almond flour (Do NOT leave this out)
  • 1 teaspoon xanthan gum
  • 1 teaspoon baking soda
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1.5 teaspoon vanilla
  • 1 bag chocolate chips.
  • DIRECTIONS:
  • Mix all wet ingredients. Then add Dry ingredients. Add Chocolate Chips last. Cook at 375 degrees for 14 minutes.

  • – 1 red pepper, diced
  • – 2 cans black beans
  • – 2 cans rotel tomatoes
  • – 1 can green chilies
  • – 1 can corn
  • – 1 onion, diced
  • – 3-4 gloves garlic, minced
  • – 2 chicken breasts
  • – 1 bunch green onions
  • – 1/2 cup fresh cilantro
  • – 1/2 tsp. chili powder
  • – 1 TB cumin
  • – TB olive oil
  • – 3 cups chicken broth
  • – 1 avocado
  • – 1 lime
  • 1. Saute onion, garlic, and bell pepper in olive oil. (3-5 mins)
  • 2. Blend, one can black beans with 3 cups chicken broth. Then add to pot.
  • 3. Add remaining ingredients and simmer until chicken is cooked.
  • 4. When finished, serve and top with cilantro, avocado, and lime juice.
